Wet Rub London Broil

The Delightful London BroilSometimes I’m really, very good at planning dinner. I will decide the meals for the week and do a big shopping trip on Sunday with a meal plan and ingredient list in hand. Sometimes (often) I go to the grocery store with one particular meal in mind and make up the rest as I go along based on what meats or fish are on sale and what produce is in season. Occasionally, this means that I am left with ingredients for meals that would generally require time and planning but to which I’ve given absolutely no thought until 45 minutes before dinner.

That is exactly what happened to me earlier this week with a London Broil. London Broil is a less expensive cut of beef that can be flavorful and delicious, but it generally requires a marinade to make it more flavorful and tender. Unfortunately, 45 minutes before dinner is not enough time for a marinade. Fortunately, it is enough time for a rub! Though a wet rub is generally a better choice for foods with longer cooking times, I think that meat, in general, tastes better with a little bit of olive oil on it before cooking, so I went with a wet rub. This one is super simple, and you can trade out different spices and ingredients as you like. Most rubs include a sugar. I chose not to include it in this one, but if you really want that sweetness, I would recommend adding brown sugar.

Wet Rub London Broil

Serves 4

  • 1.5 lb London Broil
  • 2 tbsp chili powder
  • 2 tsp garlic powder
  • 1 tsp cumin
  • 2 tsp salt
  • 2 tsp soy sauce
  • 1 tbsp olive oil

The Delightful London BroilMix all ingredients (except London Broil) in a small bowl OR sprinkle each side of steak with half amounts of all ingredients.The Delightful London BroilRub steak with mixture. Allow to sit at least 15 minutes. Preheat grill or broiler to high heat.The Delightful London BroilSear on first side for about 7 minutes. Flip and cook for an additional 5 minutes or so, until meat reaches desired temperature. Slice against the grain to ensure tenderness.The Delightful London Broil
