Pineapple Mango Salsa

The Delightful Pineapple Mango SalsaI do LOVE when it starts to get warmer. (I know, I know – come August, I’ll be railing against the heat, but for now, I’m relishing the slightly warmer days.) Though I generally think of salsa (and mangos and pineapples) as a summer food, I thought it would make a great complement to a spicy pork tenderloin and the Coconut Cauliflower ‘Rice’ I was making for dinner.The Delightful Pineapple Mango SalsaThis recipe is super simple and fresh. I have a feeling this Pineapple Mango Salsa would work just as well as a dip for some crunchy tortilla chips as it did as a sauce for the pork and cauliflower.

Pineapple Mango Salsa

  • 1/3 pineapple (approximately 1/2 dry pint large chunks), chopped fine
  • 1/2 mango, chopped fine
  • 1 jalapeno pepper, minced
  • 1 avocado, chopped medium
  • 1/4 onion, minced
  • juice 1 lime
  • 1 tsp salt, to taste

Processed with VSCOcamAdd pineapple, mango, and jalapeño to a medium bowl.Cover with juice of 1 lime. The Delightful Pineapple Mango SalsaAdd onion and avocado. Sprinkle with 1/2 tsp salt and mix. Toss to combine. Add more or less salt to taste.The Delightful Pineapple Mango Salsa
