Barbecue Beef Pot Pie with Cornbread Crust
This recipe is a mix of your favorite barbecue flavors in an easy, pretty weeknight format. This one is super filling with beef, beans and hearty cornbread. We’ve included corn, but you could sneak in some frozen spinach as well if you want more veggies.
Barbecue Beef Pot Pie with Cornbread Crust

Ingredients
- 1 tbsp olive oil
- 1 small onion, minced
- 4 slices of bacon, chopped
- 1 lb ground beef
- 2 cans baked beans
- 1 can corn
- 1/2 c. barbecue sauce
- 1 box cornbread mix, batter prepared per package instructions
Instructions
- Preheat oven to 350F
- Saute onion in oil in large, wide oven safe pan over medium high heat.
- Add bacon and ground beef, and cook through.
- Add beans, corn and barbecue sauce, and bring to a simmer.
- Spread cornbread batter evenly over bean and meat mixture, and transfer to oven.
- Cook per cornbread instructions, approximately 25 minutes, until cornbread is golden and edges are bubbling.
