Broccoli Cheese Soup
This recipe is an instant family favorite. It’s a great way to squeeze in veggies, and, served with a biscuit or side salad, makes a satisfying, delicious dinner.
Broccoli Cheese Soup
Serves 4
Ingredients
- 4 tbsp butter
- 1 onion, grated or chopped fine
- 1 1/2 tsp garlic
- 1/4 c. flour
- 2 c. chicken or vegetable stock
- 10 oz frozen broccoli
- 1 c. 1/2 & 1/2 (or whole milk if you prefer a lighter soup)
- 8 oz shredded cheddar
- 3/4 tsp ground mustard seed
- salt to taste
Instructions
- In a medium saucepan, saute onion in butter over medium high heat until onion is soft.
- Add garlic and flour, and stir for one minute more.
- Whisk in stock and stir until thickened.
- Add frozen broccoli, stir and reduce heat to medium low.
- Cover and simmer about 10 minutes until broccoli is soft.
- Remove broccoli to cutting board, and chop into bite size pieces. Return to pot.
- Stir in 1 c. 1/2 & 1/2, 8 oz shredded cheddar, and ground mustard. Stir until cheese is melted.
