Colorful Kale Slaw
This is a perfect side for pulled pork, ribs or any barbecue. We eat this in the winter to add color to the plate, but it’s also an excellent choice for a summer barbecue or picnic, since there’s no mayo to worry about. The kids enjoy being able to “eat the rainbow.”
Colorful Kale Slaw
Serves 4-6
Ingredients
- 2 c. chopped kale
- 1.5 c. chopped Napa cabbage
- 1 c. chopped purple cabbage
- 1 c. shredded carrots
- 1/4 c. + 2 tbsp olive oil
- 3 tbps apple cider vinegar
- 4-5 tbsp honey
- salt & pepper to taste
Instructions
- Combine first four ingredients in a large bowl.
- Combine remaining ingredients in a measuring cup or jar and stir or shake to mix well.
- Pour sauce over vegetables, and toss well.
- Refrigerate for at least 20 minutes before serving.
