Air Fried Chicken Thighs
I really, truly promise you won’t miss the grease. The natural fat content of the chicken thighs combined with the amazing science of the air fryer produces a crispy, delicious fried chicken. The real secret here, though, is the pickle juice brine.
Air Fried Chicken Sandwich
Serves 4
Ingredients
- 4 skinless boneless chicken thighs
- 1 c. pickle juice, reserved from jar of pickles (we use Claussen)
- 1.5 c. flour
- 2 tsp salt
- 1 tsp black pepper
- 1 egg, whipped
- 1 1/2 c. toasted Ezekiel bread crumbs
- 1 tbsp Italian seasoning
- Cooking oil spray
Instructions
- Soak chicken in pickle juice while you prepare dipping stations or up to 2 hours.
- Prepare separate bowls of flour with salt and pepper, egg, and bread crumbs mixed with Italian seasoning.
- Pre-heat air fryer to 400F for 3 mins.
- Dredge each piece of chicken in flour, then egg, then bread crumbs.
- Lightly spray both sides of each piece of chicken with cooking spray and lay in air fryer. Avoid stacking pieces on top of each other if possible.
- Cook at 400F for 14 minutes, flipping halfway through.
- Check chicken temperature with a meat thermometer. You may need to add more time for thicker chicken breasts. They should be cooked to 165F at the thickest part.Serve on a bed of lettuce or on a buttered bun with pickles.
