Greens, Eggs and "Ham"
This breakfast is quick enough to make on weekdays and feels luxurious enough for a weekend brunch. Plus, with a play on the Dr. Seuss classic, the kiddos think it’s fun and at least worth a try! You could serve with fruit or toast, but, honestly, this filling egg dish stands beautifully on its own.
Greens, Eggs, and "Ham"
Serves 1
Ingredients
- 2 slices prosciutto, chopped
- 1 tsp butter or oil (optional)
- 1 small handful frozen kale (can use fresh instead)
- salt
- 2 eggs
Instructions
- Saute prosciutto in medium nonstick saute pan over medium high heat until crisp. Remove prosciutto to plate.
- In the same pan, add kale and salt to taste, and cook until thawed. If there's not enough rendered fat remaining (you don't need much), you can add a bit of butter or oil.
- Beat eggs well in a separate bowl and add to pan with kale, stirring constantly to scramble and combine.
- Remove egg and kale mixture to plate and top with crispy prosciutto.
