Brussels Sprout Apple Salad
This super easy salad base is a great one to make your own. You could add chicken for protein to make it a meal or add nuts and cranberries for extra color and crunch as a holiday dish. It’s great just as-is for a fall or winter weeknight side and holds up well for lunch the next day. If making ahead, toss shaved apples in a combination of water and lemon juice before adding to salad to prevent browning.
Brussels Sprout Apple Salad
Serves 4
Ingredients
- 1 lb fresh Brussels sprouts, ends and outer leaves removed
- 1 large apple (recommend Honeycrisp), cored and cut into quarters
- 3 tbsp olive oil
- 1.5 tbsp apple cider vinegar
- 3 tbsp grated Parmesan
- salt to taste
Instructions
- Using a food processor or shaving attachment for a stand mixer, shave Brussels sprouts and apple.
- Drizzle with olive oil and vinegar. Toss well to combine.
- Top with Parmesan and salt to taste.
