Crock Pot Chicken & Dumplings
Who doesn’t love a dinner that cooks itself? For this one, dump frozen ingredients into a crockpot, and let them cook while you work. An hour or so before eating, add the dumplings and let it cook some more. Perfect for the fall or winter when you want that “cooked all day” taste without the fuss.
Crock Pot Chicken & Dumplings
Serves 4
Ingredients
- 1 lb chicken breast, chopped into chunks
- 1 bag frozen mirepoix (can sub 1 small onion, 1 large carrot and 2 sticks of celery, chopped)
- 4 oz frozen corn or peas
- 1 quart chicken stock
- 4 freezer biscuits, defrosted
- 1/4 c. cream, optional
- salt & pepper
Instructions
- Add mirepoix, chicken breast, corn and stock to crockpot
- Cook on low 6 hours
- Add biscuits, breaking into small bite-sized pieces
- Cook on low another 1-2 hours
- Add salt and pepper to taste
- Can thicken further with cream if desired
