Oven Fish Sticks
This recipe is a great one for a kid-friendly meatless Monday or for those observing meatless Fridays during Lent. These tasty bites come together incredibly quickly for a perfect weeknight solution.
Oven Fish Sticks
Serves 3-4
Ingredients
- 3-4 filets of cod
- 1/2 c. flour
- salt and pepper
- 2 eggs
- 3/4 c. panko bread crumbs
- cooking spray (we use avocado oil spray)
Instructions
- Preheat oven to 425F
- Slice cod into 1 inch thick strips
- Prepare 3 separate shallow bowls. Combine flour with salt and pepper in one bowl. Beat eggs in second bowl. Add panko to third bowl.
- Dredge fish pieces through each of the three bowls starting with flour, then egg, then panko, coating well and shaking to remove excess before moving to the next bowl.
- Place fish sticks on a silicone mat on a baking sheet. You can grease the baking sheet if you don't have a silicone mat.
- Spray the fish sticks with cooking spray on each side.
- Bake for 10-12 mins, flipping halfway through.
