Veggie Crunch Salad
This simple, veggie-heavy salad is a riff on a salad from Nuts n Berries Cafe in L.A. Prep hearty ingredients in a big batch in advance, and add the delicate ones as you’re assembling each day.
Veggie Crunch Salad
Serves 3-4
Ingredients
- 1/3 purple cabbage, chopped (about 1.5 c.)
- 1/2 bag shredded carrots (generous cup)
- 1 sliced English cucumber
- 1 c. shelled edamame
- 1 can mandarin oranges (14 oz)
- olive oil
- salt
- 1.5-2 c. fresh baby spinach
- 2 avocados
- 1 c. fresh basil
- 1/2 c. walnuts
- cayenne pepper
Instructions
- To prepare hearty base, toss cabbage, carrots, cucumber, edamame and mandarin oranges with a generous amount of olive oil and salt.
- For each serving, layer 1/2 c. spinach, approximately 1 c. hearty mix, 1/2 sliced avocado, 1/4 c. torn fresh basil, and 2 tbsp crushed walnuts.
- Top with a drizzle of olive oil, a little salt and a dash of cayenne pepper.
