Sausage Hash Brown Casserole

Great brunch recipe for a holiday or to feed a crowd.

Sausage Hash Brown Casserole

Serves 6

Ingredients

  • 4 tbsp butter, divided
  • 1/2 onion, minced
  • 1/2 package frozen hash browns
  • 1 lb breakfast sausage (we use chicken)
  • 7 eggs
  • 1 c. half & half or 1/2 c. whole milk and 1/2 c. heavy cream
  • 1 1/4 c. shredded cheddar, divided
  • 1/2 tsp ground mustard
  • salt

Instructions

  1. Preheat oven to 350F
  2. Saute onion in 2 tbsp butter over medium high heat in oven-safe braiser until onion softens and begins to turn translucent.
  3. Add remaining butter, hash browns, salt to taste, and cook for 8-10 minutes. Don't worry about any brown bits sticking to the bottom. Push to one side of pan.
  4. Add sausage and cook until browned through, stirring frequently. Stir to combine with potatoes. Turn off heat.
  5. In a medium mixing bowl, combine eggs, half & half, 1 c. cheese and mustard powder.
  6. Scrape bits off bottom of pan, mixing into potatoes and sausage. Pour egg mixture into pan, and stir to combine.
  7. Sprinkle remaining cheese over the top.
  8. Bake for 45 minutes, until top is golden brown.
