Sausage Hash Brown Casserole
Great brunch recipe for a holiday or to feed a crowd.
Sausage Hash Brown Casserole
Serves 6
Ingredients
- 4 tbsp butter, divided
- 1/2 onion, minced
- 1/2 package frozen hash browns
- 1 lb breakfast sausage (we use chicken)
- 7 eggs
- 1 c. half & half or 1/2 c. whole milk and 1/2 c. heavy cream
- 1 1/4 c. shredded cheddar, divided
- 1/2 tsp ground mustard
- salt
Instructions
- Preheat oven to 350F
- Saute onion in 2 tbsp butter over medium high heat in oven-safe braiser until onion softens and begins to turn translucent.
- Add remaining butter, hash browns, salt to taste, and cook for 8-10 minutes. Don't worry about any brown bits sticking to the bottom. Push to one side of pan.
- Add sausage and cook until browned through, stirring frequently. Stir to combine with potatoes. Turn off heat.
- In a medium mixing bowl, combine eggs, half & half, 1 c. cheese and mustard powder.
- Scrape bits off bottom of pan, mixing into potatoes and sausage. Pour egg mixture into pan, and stir to combine.
- Sprinkle remaining cheese over the top.
- Bake for 45 minutes, until top is golden brown.
