Fried Plantains
This delicious dish is a great restaurant-style side. This tastes best with ripe plantains. Believe it or not, it cooks very quickly and makes a great weeknight side.
Fried Plantains
Serves 4 as a side
Ingredients
- 2 large, ripe plantains, sliced
- 4 tbsp coconut oil
- salt to taste
Instructions
- Melt 2 tbsp coconut oil in a large non-stick skillet over medium high heat until shimmering but not smoking.
- Add plantains in one layer. May need to work in batches depending on size of skillet. Cook until bottoms are golden brown, about 3 minutues.
- Flip and cook until the other side is golden.
- Remove onto papertowel to drain, and sprinkle with salt.
- Move to cutting board or plate and gentle smash with flat edge of knife.
- Melt additional coconut oil if needed.
- Return plaintains to pan for about a minute per side.
- Remove to papertowel again to drain.
