Cuban Style Picadillo
This dish is a true favorite AND is easily ready in under 30 minutes. Traditionally served with rice and beans, it’s also delicious with plantains, which are also easily ready in under 30 minutes. These take a more focused 30 minutes than most of the dishes on the site, but you will be well rewarded!
Cuban Style Picadillo
Serves 4
Ingredients
- 1 tbsp olive oil
- 1 small or 1/2 large onion, minced or grated
- 1 tbsp tomato paste
- 4 tsp minced garlic (about 4 cloves)
- 2 tsp ground cumin
- 2 tsp dried oregano
- salt and pepper
- 2 bay leaves
- 1/2 c. dry white wine
- 1 lb ground beef
- 3/4 c. canned diced tomatoes, drained
- 1 1/2 tbsp Worcestershire sauce
- 1/3 c. raisins
- 1/2 c. pimento stuffed olives, sliced
- 2 tbsp olive brine
Instructions
- Saute onion in olive oil in a large saute pan over medium high heat until beginning to be translucent.
- Add next five ingredients and stir until fragrant - 1 to 2 minutes.
- Add bay leaves and wine and simmmer for about 5 minutes until wine is reduced by about half.
- Add ground beef, breaking into pieces and stirring frequently until browned, about 5 minutes.
- Stir in remaining ingredients, reduce heat to low. Cover and simmer about 10 to 12 minutes more to allow flavors to combine.
