Cauliflower Pasta Gratin
The name does not do this one justice. This dish is incredibly delicious and a family favorite. It feels fancy enough for a dinner party side dish and is easy enough for a weeknight favorite. Plus, it’s a great way to squeeze veggies into a kid favorite - mac and cheese!
Cauliflower Pasta Gratin
Serves 6
Ingredients
- 6 oz frozen cauliflower
- 6 oz pasta
- 4 tbsp butter, divided
- 3 tbsp flour
- 2 c. whole milk
- 1/2 c. shredded gruyere
- 1/2 c. shredded havarti
- 1/4 tsp nutmeg
- 1/3 c. panko bread crumbs
- 1/3 c. grated parmesan
- salt to taste
Instructions
- Preheat oven to 375F.
- Bring a large pot of salted water to a boil. Add cauliflower and pasta.
- Meanwhile, in a large oven-safe braiser, melt 2 tbsp butter over medium heat. Add flour and stir to combine.
- Whisk in milk and continue stirring until thickened.
- Remove from heat and stir in Grueyere, Havarti and nutmeg. Continue stirring until cheese is melted and well combined.
- Once cauliflower is soft and pasta is al dente, drain well and stir into cheese sauce.
- Melt remaining butter
- Top with bread crumbs and Parmesan and drizzle with melted butter.
- Bake for approximately 25 minutes until top is golden brown and sides are bubbling.
