Creamed Spinach
This might be my favorite vegetable side dish. It is luxurious and incredibly flavorful. This side pairs beautifully with steak or lobster for a special occasion, but it also comes together quickly enough to be a week night favorite. The leftovers also heat up well the next day.
Creamed Spinach
Serves 4
Ingredients
- 2 tbsp butter
- 2 small or 1 large shallot, minced
- 2 tbsp flour
- 1 cup half & half
- 10 oz frozen spinach
- 1/2 c. Parmesan, grated
- pinch of nutmeg
- salt and pepper
Instructions
- Saute shallot in butter in medium fry pan (or braiser) over medium high heat until soft.
- Sprinkle flour over butter and stir for another minute.
- Whisk in half & half, stirring constantly until it begins to thicken.
- Add spinach and stir often until spinach is warmed through and sauce is thickened.
- Add Parmesan, nutmeg and salt and pepper to taste, stirring until cheese is melted and combined.
