Spinach & Goat Cheese Quiche
This one is a favorite in our house. It takes a bit longer to make than most of the recipes here, but the active time is still minimal. I promise it’s worth the extra time in the oven!
This one is also great for leftovers for breakfast or a grab-and-go lunch the next day
Spinach & Goat Cheese Quiche
Serves 4-5
Ingredients
- 1 pie crust
- 1 large shallot, chopped
- 1 tbsp butter
- 8 oz frozen spinach
- 6 oz goat cheese, crumbled
- 3 eggs
- 1 c. whole milk
- 1/2 c. heavy cream
- salt and pepper
Instructions
- Heat oven to 350F
- Form pie crust in pie dish, and bake for approximately 20 minutes, until light golden
- Meanwhile, saute shallot in butter over medium high heat. Add spinach, salt and pepper, stirring frequenly until spinach is completely thawed and water has evaporated. Allow to cool.
- Combine eggs, milk, cream and additional salt and pepper in a dish. Mix well.
- Spread 1/2 of goat cheese over pie crust. Top with spinach mixture then remaining crumbled goat cheese. Pour egg mixture over all.
- Bake for 40 minutes, until edges are firmly set.
