Spinach & Goat Cheese Quiche

This one is a favorite in our house. It takes a bit longer to make than most of the recipes here, but the active time is still minimal. I promise it’s worth the extra time in the oven!

This one is also great for leftovers for breakfast or a grab-and-go lunch the next day

Spinach & Goat Cheese Quiche

Serves 4-5

Ingredients

  • 1 pie crust
  • 1 large shallot, chopped
  • 1 tbsp butter
  • 8 oz frozen spinach
  • 6 oz goat cheese, crumbled
  • 3 eggs
  • 1 c. whole milk
  • 1/2 c. heavy cream
  • salt and pepper

Instructions

  1. Heat oven to 350F
  2. Form pie crust in pie dish, and bake for approximately 20 minutes, until light golden
  3. Meanwhile, saute shallot in butter over medium high heat. Add spinach, salt and pepper, stirring frequenly until spinach is completely thawed and water has evaporated. Allow to cool.
  4. Combine eggs, milk, cream and additional salt and pepper in a dish. Mix well.
  5. Spread 1/2 of goat cheese over pie crust. Top with spinach mixture then remaining crumbled goat cheese. Pour egg mixture over all.
  6. Bake for 40 minutes, until edges are firmly set.
