Tomato & Goat Cheese Tart
This incredibly simple Summer tart is as delightful to make as it is to eat. With just a few ingredients and steps, this dinner easily comes together in just about 30 minutes.
This meal is consistently a hit in our house, and it helps that clean up is such breeze too.
Tomato & Goat Cheese Tart
Serves 3-4
Ingredients
- Pie crust
- 1 tbsp butter
- 1 large shallot, chopped
- 16 oz cherry or grape tomatoes, chopped
- 8 oz goat cheese
- 2 tsp thyme
- salt
Instructions
- Preheat oven to 400 degrees.
- Par-bake crust for about 5 minutes until it just begins to turn light golden.
- Meanwhile, saute shallots in butter over medium high heat until softened.
- Add tomatoes, 1 1/2 tsp thyme and salt and toss for 1 to 2 minutes. Remove pan from heat.
- Crumble 4 oz goat cheese on pie crust. Layer tomatoes and shallots next. Top with the remaining goat cheese, and sprinkle with remaining thyme.
- Return to oven and bake for 10-12 minutes, until crust is golden and cheese just begins to brown.
