Tomato & Goat Cheese Tart

This incredibly simple Summer tart is as delightful to make as it is to eat. With just a few ingredients and steps, this dinner easily comes together in just about 30 minutes.

This meal is consistently a hit in our house, and it helps that clean up is such breeze too.

Tomato & Goat Cheese Tart

Serves 3-4

Ingredients

  • Pie crust
  • 1 tbsp butter
  • 1 large shallot, chopped
  • 16 oz cherry or grape tomatoes, chopped
  • 8 oz goat cheese
  • 2 tsp thyme
  • salt

Instructions

  1. Preheat oven to 400 degrees.
  2. Par-bake crust for about 5 minutes until it just begins to turn light golden.
  3. Meanwhile, saute shallots in butter over medium high heat until softened.
  4. Add tomatoes, 1 1/2 tsp thyme and salt and toss for 1 to 2 minutes. Remove pan from heat.
  5. Crumble 4 oz goat cheese on pie crust. Layer tomatoes and shallots next. Top with the remaining goat cheese, and sprinkle with remaining thyme.
  6. Return to oven and bake for 10-12 minutes, until crust is golden and cheese just begins to brown.
