Kale Chicken Caesar Salad
This quick to assemble grab-and-go lunch holds up well during the week thanks to hardy kale. Add chicken or swap for salmon, shrimp or tofu for a different take. Add croutons just before eating so that they donโt get soggy.
Kale Chicken Caesar
Serves 4
Ingredients
- 6 c. chopped kale, stems removed
- 1/3 c. Caesar dressing (I love 365 Organic)
- 6 tbsp grated Parmesan
- 1 c. garlic croutons
- 1 lb. chicken breasts, cut into thin strips
- 1/4 c. olive oil
- 1 tbsp poultry seasoning
- salt & pepper
Instructions
- Heat large saute pan over medium high heat.
- In a medium bowl, toss chicken in olive oil, spices and salt and pepper.
- Pour chicken into saute pan, separating with tongs. Cook until beginning to brown, 3-5 mins. Turn and continue cooking until cooked through, about 7 mins. Allow to cool.
- Meanwhile, toss kale in Caesar dressing. Coat evenly.
- Separate kale into four containers, and top with a few strips of chicken each.
- Sprinkle each serving with Parmesan. Refrigerate prepped dishes for grab-and-go meals.
- Top with croutons just before serving.
