Brown Sugar Pecan Crusted Salmon
Salmon is a great weeknight protein. It has lots of health benefits (omega 3’s, etc. so we’re told), and it cooks very quickly. This recipe is a riff on a restaurant favorite and was a hit with the family. Served with broccoli and mashed potatoes, but would also work beautifully with wild rice and green beans.
Brown Sugar Pecan Crusted Salmon
Serves 2-3
Ingredients
- 2 6oz fillets of salmon
- 1/2 c. milk
- 1/2 c. pecans, crushed
- 3 tbsp brown sugar
- 2 tbsp + 1/2 tsp butter, softened and divided
- 1 tbsp minced ginger
- 1 tbsp soy sauce
- salt and pepper to taste
Instructions
- Preheat oven to 400F
- Soak salmon in milk for 15 minutes. Rinse and pat dry.
- Combine pecans, brown sugar, 2 tbsp butter, ginger, soy sauce, salt and pepper .
- Rub baking dish with 1/2 tsp butter.
- Place salmon in baking dish, skin side down, and top with pecan mixture.
- Bake for 10-12 minutes, until salmon flakes easily with a fork.
