Sheet Pan Tomato Mozzarella Gnocchi
Sheet pan dinners are great weeknight dinner staples. Limited dishes, and they cook themselves! This one is particularly easy with a short ingredient list and quick cooking time. It’s also another perfect recipe for little hands to help with.
Sheet Pan Tomato Mozzarella Gnocchi
Serves 2-3
Ingredients
- 1 package gnocchi
- 1 pint cherry tomatoes
- 2 tbsp olive oil
- handful fresh basil, sliced
- 6 oz ciliegine mozzarella
Instructions
- Preheat oven to 400F.
- Toss gnocchi and tomatoes in olive oil on a sheet pan.
- Spread everything out evenly and sprinkle with basil.
- Roast for 10 to 15 minutes, flipping once, until gnocchi are golden brown and tomatoes have burst.
- Portion onto plates, and top with equal amounts of mozzarella.
